Coleslaw, Pineapple and Beef Burger

You probably remember that killer burger that was my Giant Cheeseburger and its Special Burger Sauce: THE Ultimate Burger Sauce ? Well here’s his friend: the Coleslaw Pineapple and beef Burger…! It’s crunchy, moist, juicy, sweet and salty! It’s a real delight, a pleasure in the plate and in the mouth !

For this recipe, I also used their cousin THE Ultimate Burger Sauce, which is actually so tasty and creamy that I couldn’t make anything else for this pineapple burger!

Pineapple, this delicious winter fruit full of benefits !

Here the real treat is the added slice of pineapple …! This sweet/salty side of the burger is really to die for…! By the way, let’s enjoy it, because it’s the pineapple season and yes it’s in winter that we find the best pineapples on our stalls!

The pineapple is really a “super fruit”: juicy, sweet, bright yellow! It can be eaten peeled, plain, in fruit salad, in smoothie, on skewers, in pies, cakes,… And it is very appreciated to give a touch of exoticism to meats such as duck (sweet and sour sauce) or with seafood and fish.

In addition, fresh pineapple has the particularity of containing an enzyme called “bromelain”. The purpose of this enzyme is to start and accelerate the digestion of proteins, which results in excellent digestion of meat and fish eaten at the same time as raw pineapple. This enzyme is used in pharmacology to treat disorders of the pancreas and digestion.

Some benefits of the pineapple :

  • it’s good for the bones
  • it has anti-inflammatory properties
  • pineapple acts as an anticoagulant.
  • prevents colds and infections
  • it improves digestion
  • this fruit is a great detox fruit!

In this recipe, I simply took a slice of raw pineapple and put it straight into the burger. But for an extra treat, before putting the slice in the burger, you can roast it in a frying pan with a teaspoon of coconut oil or butter and a teaspoon of brown sugar…. It’s just an idea like that, right?

What meat should you use for the steak ?

I simply used ground beef for this burger. Of course you can use whatever meat you want, it doesn’t really matter. The most important thing is the taste, so make sure you use the flavours you like!

If you want to do something faster you can also use a ready-made burger steak. It’s more convenient!

You can even turn this burger into a vegetarian burger by simply skipping this part of the recipe! You can use a soy steak, or make a chickpea or kidney bean steak instead!

How to make delicious caramelized onions ?

Caramelized onions … it’s so good … They are super easy to make, the only thing to remember is : time ! Yes the onions caramelize very gently in the pan over very low heat! You have to be patient !

Besides, the onions caramelize by themselves thanks to the sugar they contain. The spoon of honey in the recipe is therefore optional!
Caramelized onions go with many other preparations such as meat, vegetables or soups…

How to make a fail-proof homemade mayonnaise ?

Homemade mayonnaise, how good is that! And it’s very easy and quick to make!
Here, I give you some tips to always make a good mayonnaise !
First of all, the first ingredients are very important: egg yolk, mustard, vinegar, salt and pepper. All these ingredients play a role to give taste and help stabilize the mayonnaise.

Next, put a kitchen cloth under your bowl, so that it does not move, and start pouring a very fine drizzle of oil while stirring vigorously with a whisk. You can also use a hand mixer if you prefer, but it’s not that difficult to do with a whisk!

To make sure the mayonnaise become thick, continue to pour the oil very gently AND whisk very vigorously at the same time!

That’s it, depending on the amount of oil you put in, you will have a more or less quantity of mayonnaise.
Once the mayonnaise is done, you can taste and adjust the salt and pepper.

There are many variations of mayonnaise! If you want a very light mayonnaise, replace some of the oil with plain yoghurt! You can also make the famous Aïoli: it’s simply mayonnaise with a crushed clove of garlic, flavour guaranteed!

Now you can even make an egg-free mayonnaise! Simply replace the egg yolk with unsweetened condensed milk or plain yoghurt. Add mustard, salt and pepper and then whip up the mayonnaise with oil. Perfect when you don’t eat eggs or raw eggs or if you are allergic!

The delicious salad: coleslaw

Coleslaw is really one of my favorite salads! Here, I put it in this burger but it’s perfect as a starter of course or even in another sandwich!

I like this salad in its simplest version: carrots, cabbage and mayonnaise!

There are coleslaw recipes with additional ingredients: plain yoghurt, raisins, cider vinegar, chives, parsley and sugar! I prefer it simple, but there are many variations!

How to assemble this tasty burger ?

I bought the burger buns at a bakery, you can have the burger buns you want or even make them yourself!
You can follow the order of the ingredients I indicate, but in the end it’s up to you! It doesn’t really matter!
Just don’t forget to put a lot of sauce… 🙂

Ingredients

For the Steak

  • 100 g ground meat (3.5 oz)
  • 1/2 grated onion
  • 1/2 clove of garlic, grated
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 1 tsp vegetable oil
  • 1/2 tsp salt
  • 1 pinch pepper

For the Caramelized Onions

  • 1 small onion
  • 1 tbsp vegetable oil
  • 1 tsp honey
  • 1 pinch of salt and pepper

For the Mayonnaise

  • 1 egg yolk
  • 1/2 tsp mustard
  • 1 tsp vinegar
  • 1 pinch of salt, pepper
  • 20 cl vegetable oil

For the Coleslaw

  • 1 small carrot
  • 1/8 white cabbage
  • 1 to 2 tbsp mayonnaise

For the rest of the Filling

  • 1 burger bun
  • 1 slice pineapple
  • 2 slices tomato
  • 1 slice of cheese ( cheddar or any cheese of your choice )
  • 1 lettuce leaf
  • 4 tbsp THE Ultimate Burger Sauce

Instructions

For the Steak

  • Mix the ground meat with the spices, grated garlic and onion, salt and pepper.
  • Form a fairly thin steak.
  • In a frying pan over medium heat, put a teaspoon of vegetable oil and cook the steak by pressing it once or twice to keep it thin.
  • Cook for a few minutes on each side and set aside.

For the Caramelized Onions

  • Cut the onion into thin slices.
  • In a frying pan over low heat, pour a tablespoon of vegetable oil and the onion slices.
  • Pour a little water and the spoon of honey.
  • Cover and cook for 30 to 40 minutes, stirring occasionally.
  • You can add water if necessary during cooking.
  • When the onions are brown and soft you can stop cooking and set aside.

For the Mayonnaise

  • In a bowl, pour an egg yolk and mustard. Mix well.
  • Then add the vinegar, salt and pepper and whisk well until the salt is completely dissolved.
  • Add a drizzle of oil and whisk well.
  • Pour the oil in very small quantities until the desired amount of mayonnaise is obtained (20 cl is just a general indication).
  • Whisk well all the way through so that the mayonnaise sets well and is firm.

For the Coleslaw

  • Wash the carrot and cabbage.
  • Peel the carrot and cut it and the cabbage into very thin slices.
  • Mix the carrot and cabbage slices with one to two tablespoons of mayonnaise. Set aside.

For assembling the Burger

  • Just before assembling your burger, put your steak back in the pan over low heat and put a slice of cheese on top of the steak to melt it by covering the pan with a lid.
  • Spread THE Ultimate Burger Sauce generously over the base of the burger bun.
  • Then place two slices of tomato and a lettuce leaf.
  • Then place 2 tablespoons of coleslaw, then a tablespoon of THE Ultimate Burger Sauce, then the steak and its melted cheese, then a nice slice of pineapple and finally a nice tablespoon of caramelized onions.
  • On the inner of the burger bread top, put one or two tablespoons of THE Ultimate Burger Sauce.
  • You can hold it all together with a wooden skewer.
  • Then sit down at the table, get some paper towels and get ready to take a huge bite of this crasy delicious burger !
