Sugar-free chocolate mousse
Creamy … Chocolatey … and sugar free ! But extremely DELICIOUS! Here is a sweetness very much appreciated by all, particularly by people following the ketogenic diet! I specify “ketogenic”, but it is finally a mousse that will be perfect for everyone who doesn’t eat sugar, by choice or by necessity (I think about diabetics for example). Yes, we can enjoy desserts even without sugar!
Sugar Free Chocolate Mousse
Ingredients
- 1,75 oz mascarpone
- 1 oz whipping cream
- 1 tsp unsweetened cocoa powder
- 1 1/2 tsp Erythritol or sweetener equal to 1 tsp of sugar
- 1 pinch of salt
Instructions
- Before starting the recipe, put the bowl, the whisk and the cream in the freezer for 15 to 20 minutes.
- In a bowl, mix together the mascarpone, the cocoa, the sweetener and the salt. Mix them well.
- Take out the bowl, the whisk and the cream from the freezer. Whip the heavy cream on medium-high speed for 4-5 min tops
- Then gently mix the whipped cream with the mascarpone mixture.
- Pour everything in a glass or bowl and keep it in the fridge for at least 4 hours.

KETOGENIC, WHAT IS IT?
The ketogenic diet is a high-fat, adequate-protein, very low carbohydrate, sugar-free diet that can help you burn fat more effectively.
It seems difficult to set up no? Well, not that much, in fact, everything is a matter of habits!
In today’s society, we have been told that we must eat carbohydrates, protein and fats. The carbohydrates part is quite important (about 60% of the calorie intake). But not everything is written in the stone! This ketogenic diet looks a little astonishing (eat mostly fat ??)! But we must understand the mechanism that it involves in the body.
In simple words, with this diet, the glycogen reserves (stored “carbs”) are minimized as much as possible. But the body usually uses carbohydrates as sources of energy. So he will use lipids, through certain mechanisms, to create ketones, which will be used as a source of energy. In summary: he will use our FAT for the good functioning of our system. You see what I mean ? Yes the ketogenic diet helps losing weight and more particularly fat!
In addition to weight loss, the ketogenic diet has many therapeutic benefits on diseases such as epilepsy, diabetes, some cancers and neurodegenerative diseases.

SUGAR FREE CHOCOLATE MOUSSE, AS SIMPLE AS THAT
I say in the title that it is a “Ketogenic” chocolate mousse because it is a dessert that would typically be used in this diet. Why ? Because it is mainly composed of Fats ! But, in other words, this Mousse is finally a Mousse without sugar! Which makes it perfect for diabetics! Yes, it is sometimes difficult to please yourself with desserts when you are not alowed to eat sugar, but today many products allow us to make delicious and greedy desserts without sugar!
The Mascarpone
Mascarpone is a cream cheese with Italian origins. It has a creamy but consistent texture! It is used in cooking, more often in pastry. The famous Tiramisu is made with Mascarpone !
Mascarpone is one of the mostly used products to make pastry in the ketogenic diet because it is composed mainly of lipids (it also contains proteins, sodium and a very small amount of carbohydrate). And, it must be said, that it is not difficult to make good desserts with!
For this recipe, I mix with the mascarpone, a whipped cream to add a little lightness to the mousse. And it works really well!
The COCOA
The purpose of this recipe is to minimize the presence of carbohydrates (and therefore of sugars). So I use a 100% pure cocoa powder knowing that we will find the sweet taste with the sweetener. You can also use 100% pure chocolates chunks. And if your goal is only to limit the sugar in the Mousse, you can still use a 85% chocolates chunks for example. It all depends on how much sugar you can tolerate. In case you use chocolates chunks, you have to first, melt them in the microwave or bain-marie, then mix the melted chocolates with the mascarpone.
The sweetener “0 net carbs”
I used in this recipe a liquid “0 net carbs” sweetener! Be careful about the composition of the sweeteners you buy. Indeed, many of them are combined with other cheap products like Maltodextrin and are therefore incompatible with the keto or low carb diets. It’s something you really have to be careful about! Moreover, if you have diabetes, and have to use a sweetener, you may prefer using use a carb-free ones. The best known are Erythritol, Fruit Monk and stevia! They are available in powder or liquid forms, Some looks like sugar but contains…0 sugar! That’s really perfect for cooking and more particularly for baking!
